Every morning at Sacré-Cœur School in Mont-Saint-Michel, Quebec, a delightful aroma of pancakes fills the air. Behind this morning feast? Claudine Bissonnette, a dedicated volunteer who has been serving breakfast to 34 students for the past eight years. Alongside her husband, she puts her heart into giving children a great start to their school day. 

Creativity in the Kitchen 

Despite a small space, Claudine showcases remarkable ingenuity. Her secret? A simple cart transformed into a prep station! And her magic ingredient: homemade pancakes that the children adore. She proves that even without a full kitchen, it’s possible to create delicious and nutritious meals with a little creativity and a lot of love. 

Raising Awareness About Food Waste 

For Claudine, feeding children is about more than just filling their stomachs. Every morning, she takes the opportunity to educate them about food waste and encourage healthy habits. She helps them better understand their own needs by listening to their hunger and fullness cues, while also introducing them to new foods. 

Smart Anti-Waste Tips 

Her commitment to reducing waste doesn’t stop there! To avoid any food loss, she saves leftover applesauce and yogurt to make homemade popsicles—an ingenious idea she picked up at a food waste reduction workshop. She also ensures that waste sorting is done correctly by setting up clear pictograms to help children recycle properly. 

A Passion That Never Fades 

Claudine is an inspiration to all. As she puts it herself: as long as her health allows, she will be there every morning for these children.
